Nobody could afford coconut oil during the war in the 1940s. Although it had been used in European and American, not to mention Caribbean and Filipino, cooking for centuries, Americans lost their access to it, except at exorbitant prices. (If you’re wondering, that’s how soy was able to get such a foothold in our eating practices.)
When coconut oil reentered the market, the national food and health authorities had turned on it – they claimed it was basically lard. Coconut oil is 93% saturated fat, and during the 1950s, there wasn’t a dirtier curse word in the medical community.
We thought it clogged arteries and caused heart disease.
Since the pandemic and subsequent global shut-down seems to be heralding a new era in which our dependence on fossil fuels is not only cruel
When Hippocrates famously said, “All disease begins in the gut,” he likely had no idea how right he was.
For example, could he have known that the gut contains 10 times more bacteria responsible for regulating your health than the rest of the body?
Or that the bacterial transfer that occurs at birth affects the diversity of your microbiome (collection of gastro-intestinal bacteria in the digestive tract) for life?
Is it possible that he knew the root cause of bacteria destruction in the gut flora also weakens the gut barrier and leads to leaky gut, diverticulitis, and other disorders?
Maybe not. But he was on the right track.
